8 oz Lager (I used Red Stripe)
1/2 cup jerk sauce
1 cup sliced onion
4 oz fresh lemon juice
1/4 tsp salt
1/4 tsp black pepper
3 chopped garlic cloves
4 skinless chicken breasts
4 skinless chicken thighs
3 tbsp ketchup
1 tbsp hot sauce
Julienne-cut green onions


1) Mix together 1/4 cup jerk sauce, sliced onion, lemon juice salt, pepper and garlic in a large zip-top bag.
2) Add chicken to bag; seal. Marinate in refrigerator overnight, turning occasionally.
3) Remove chicken from bag; discard marinade.
4) Heat grill on medium-high heat.
5) Combine 1/4 cup jerk sauce, beer, ketchup, and hot sauce.
6) Grill chicken turning and basting with beer mixture (about 30 min.)
7) Garnish with green onions.

Serving size: 4-8
