  Let's get this party started EARLY! Doppelbock #1:
  
  Allgauer Brauhaus - Kempten, Germany
  Cambonator Dunkler Doppelbock
  7.2% ABV
  
  Poured out a nice chocolate brown, fairly clear with light tan head that dissipated quickly. Not too much lacing in my glass anyway (might be all the swishing).
  
  Very malty nose with some licorice. Tastes hoppy, gingerbread...feel like I'm in Germany just drinking it...if you've never been to Germany, need to go during the holiday season...oh I digress...anyway, nice spicy sweet taste, fairly carbonated. The carbonation overpowers when served cold...much better as it warms up..as the sweetness comes out.
  
  I give this beer a B+.

  Greetings fellow VBTC members !! I decided to revisit an old favorite of mine for the doppelbock tasting: Celebrator. This is an authentic German brew with an ABV of 6.7%. It's on the dark side, has a nice chocolate maltiness and finishes very smooth. To taste complexity, I typically take one out of the fridge, uncap it, and let it sit for 10-15 minutes before I pour it. Really tasty stuff.... I'd give it a 8 out of 10

  Well this is all I could add to what Greg had to say about this Profoundly dark and rich with a complex fruitiness of roasted malt
  and whole hop with that elixir on the tongue.

  I and oregonbeerlover agree that this should be " On hand Beer" all refrig... and I might even give a little more of a higher point than Greg did. Way to go Greg........

  Spaten Optimator
  Spaten-Franziskaner-Bräu 7.20% ABV
  
  This pours out a clear chocolaty-amber color with a cream coffee colored head that dissipates pretty quickly. Aromas of malt, yeasty bread, maple syrup, toffee and molasses. Moderate carbonation. In the mouth you can really taste the malt, caramel and molasses with a toasty, nuttiness that is followed by a slight bitterness from the hops. Almost a velvety mouthfeel. Nice finish that is pretty sweet. A really good beer that drinks very smooth despite the 7.2% ABV.

  Rogue Ales - Newport OR
  Double Dead Guy Ale - Doppelbock style
  9.0% ABV
  
  Let me start out by saying, this beer does not look or taste like a doppelbock...but it is categorized as such...whatever!
  
  Kind of disappointed when I poured it, and saw, hey it looks like Dead Guy Ale. Cloudy amber in color, cream colored head.
  
  Very hoppy to the nose and taste. Tastes like regular Dead Guy kicked up a notch. Very subtle on the malt. Would expect more malty taste and aroma from the style. Nice and fairly fruity upfront. Finishes fairly bitter and hoppy.
  
  Dead Guy is one of my favorite amber ales. Would I pay $10.99 again for something just a bit stronger, and not really different? Probably not. Would I call this a doppelbock? Definitely not.

  Weihenstephaner Korbinian
  Brauerei Weihenstephan 7.40% ABV
  This pours out a deep reddish-amber and is very clear. The head is dark cream colored and hangs on for a little while before dissipating. On the nose you get scents of malty molasses, raisins and cardboard (yes, cardboard! But in a good way). A good bit of carbonation. Tastes of roasted malt overtake any other flavor initially but then you get the fruit (raisin, roasted fig) and molasses. Full bodied and smooth with almost a creaminess to it. The finish has a little hops on it but the malt comes back and reasserts itself. A great brew from the oldest brewery in the World.

  Der HirschBrau Privatbrauerei Höss 7.20% ABV
  
  This pours out a brownish amber with great clarity and an off white head that quickly dissipates. Caramel, fresh, yeasty bread, malt and spice are prevalent on the nose. Nice carbonation, lighter bodies than the Weihenstephaner Korbinian or the Spaten Optimator, some sweetness in the mouth but also a little drying. Some nice raisiny fruit and an almost port like flavor to go with the molasses. Some slight bitterness on the finish. Not as full bodied as the other too but I liked it a lot.

  Aventinus byt G. Schneider & Sohn from sunny Kelheim, Germany
  8.2 abv
  
  Basically a wheat dopplebock. Dark and cloudy, it pours with a nice head that disappates fairly quickly. It has yeasty smell of the bottle-conditioned wheat ale it is. A bit fruity, a bit malty, it tastes like strong wheat ale. I like it, but it doesn't make the favorite's list.
  
  By the way, this one from above sounds great:
