So now when I find a really good brew that is aged and high alcohol content, I like to use it as a marinade, about a table spoon or two, or depending on the size of the steak or poultry. I'll let it sit over night or as long as 3 days to let the meat or poultry absorb the beer. I haven't really experimented with seafood, but that's next on my todo list.I have found that stouts tend to taste better in chili and hoppier beers seem to balance out the spices. The most recent one that I have tried was marinading steak & poultry with The Dark Knight Returns and it's great on both.  less
